🐟 Mackerel and potato fishcakes
Rich, soft fishcakes made with fresh mackerel and mashed potato, a brilliant way to get omega-3 fats into your baby's week.
Makes about 10 small fishcakes
Ingredients
Method
- Boil the potatoes until soft, drain well and mash.
- Grill or bake the mackerel for 8 to 10 minutes until it flakes. Remove the skin and check very carefully for bones.
- Mix the fish, mash, spring onion, dill, lemon zest and half the egg.
- Shape into small patties, brush with the remaining egg and coat in crumbs.
- Bake at 200C (180C fan) for 15 minutes until golden and hot through.
Serving it to your baby
From 9 months, cut each fishcake in half or into strips your baby can pick up. They can also be crumbled onto a tray for pincer practice.
For the rest of the family
Serve the adult cakes with horseradish, beetroot and salad.
Storing and reheating
Cool quickly and keep covered in the fridge for up to 1 day, or freeze for up to 2 months (only if the fish was not previously frozen). Defrost in the fridge, reheat until piping hot throughout, then cool before serving. Never reheat more than once.
