Ingredients

Method

  1. Soften the onion and peppers in the oil for 10 minutes.
  2. Add the garlic, cumin and paprika and stir for a minute.
  3. Add the tomatoes, beans and a splash of water and simmer for 20 minutes until thick.
  4. Stir in the sweetcorn and cook for 5 minutes more.
  5. Mash baby's portion with a fork to break up the beans and sweetcorn.
  6. Serve with soft rice and a spoon of plain yoghurt.

Serving it to your baby

At 10 months mash well or squash each bean, since kidney beans and sweetcorn kernels are firm. From 12 months lightly mash or serve as is with beans squashed. Corn skins often pass through undigested, which is normal.

For the rest of the family

Spoon out baby's portion, then add chilli powder or chopped chilli, salt and lime to the pot. Top with soured cream, avocado and coriander.

Storing and reheating

Cool quickly (within an hour), then keep covered in the fridge for up to 2 days. Freeze in small portions for up to 3 months and defrost overnight in the fridge. Reheat until steaming hot all the way through, stir, then let it cool before serving. Never reheat more than once. Cooked rice should be kept no more than 1 day in the fridge and reheated once.

Questions parents ask

Are kidney beans safe for babies?

Tinned kidney beans are already cooked and safe. If you use dried, soak and boil hard for at least 10 minutes before simmering, as raw kidney beans contain a natural toxin.

Can babies eat sweetcorn?

Yes. Blitz or mash it for younger babies, as whole kernels can be a choking risk until baby is chewing well.
