Ingredients

Method

  1. Cook the rice according to the packet.
  2. Steam the tempeh for 10 minutes to soften it.
  3. Fry the tempeh in the oil until golden, then add the pepper and green beans with a splash of water and cook until tender.
  4. Add the garlic, ginger and pineapple for 2 minutes.
  5. Whisk the peanut butter, lime, soy sauce and water into a dressing and toss through.
  6. Serve toddler portions with the beans cut small and the pineapple in tiny pieces.

Serving it to your baby

From 12 months serve tempeh fingers and well-cooked green beans as finger food, with pineapple chopped small since it can be fibrous. For a 9 to 12 month baby, leave out the soy sauce and finely chop the tempeh into the rice.

For the rest of the family

Add sambal or chilli and extra soy sauce to the adult bowls.

Storing and reheating

Keep covered in the fridge for up to 1 day. Rice needs extra care: cool within an hour, keep in the fridge for no more than 1 day, and reheat only once until steaming hot. Do not freeze.

Questions parents ask

What is tempeh and is it good for toddlers?

Tempeh is fermented soya beans pressed into a block. It is firm, nutty and rich in protein and iron. Steam it first so it is soft enough for little ones.

Is pineapple OK for babies?

Yes. Ripe pineapple is fine from 6 months. Offer soft long spears to hold or cut very small, as the core is tough.
