🌯 Toddler pinto bean burrito bowl
A colourful Mexican-inspired bowl of cumin-spiced pinto beans, rice, sweetcorn, avocado and a fresh tomato salsa. Pinto beans provide iron and protein, and the salsa and peppers provide vitamin C.
Makes 2 toddler portions plus 2 adult portions
Ingredients
Method
- Cook the rice according to the packet.
- Soften the pepper and garlic in the oil, then add the beans, cumin and a splash of water and cook for 5 minutes, mashing roughly.
- Warm the sweetcorn through.
- Mix the tomato with half the lime juice and coriander for a mild salsa.
- Mash the avocado with the remaining lime.
- Build bowls with rice, beans, corn, salsa, avocado and cheese.
Serving it to your baby
From 12 months lightly mash the beans and keep the corn mixed into the rice, or blitz it briefly. For a baby from 9 months, mash everything together and serve avocado in strips.
For the rest of the family
Add salt, chilli, pickled jalapeños and soured cream to adult bowls.
Storing and reheating
Keep beans and salsa in the fridge for up to 2 days. Rice needs extra care: cool within an hour, keep in the fridge for no more than 1 day, and reheat only once until steaming hot. Avocado is best fresh.

Questions parents ask
Can toddlers eat pinto beans?
Yes. Lightly mashed, they are a soft, iron-rich food. Tinned beans in water with no added salt are ideal.
How do I serve avocado to a toddler?
Offer ripe avocado in strips or mashed. Rolling strips in ground oats can make them easier to grip.
