🌮 Turkey and black bean quesadilla triangles
Crisp tortilla triangles filled with mildly spiced turkey mince, mashed black beans and melted cheese. A Mexican-inspired toddler lunch that is easy to hold and good for iron.
Makes about 8 triangles
Ingredients
- 150g Turkey mince
- ½ x 400g tin Black beans (no added salt, drained and mashed)
- 2 large Tortilla wrap (wholemeal if you like)
- 40g Cheddar (grated, pasteurised)
- ½ tsp Cumin
- ¼ tsp Paprika (sweet)
- ¼ Red pepper (very finely diced)
- 1 tsp Rapeseed oil
Method
- Cook the turkey mince and pepper in the oil with the spices for 6 to 8 minutes until cooked through.
- Stir in the mashed beans and a splash of water to make a soft, spreadable filling.
- Spread the filling over half of each tortilla, scatter over the cheese and fold over.
- Cook in a dry frying pan for 2 to 3 minutes each side until golden and the cheese has melted.
- Cool slightly, then cut into triangles or strips.
Serving it to your baby
From 12 months, cut into thin strips or small triangles. For babies from 9 months, use a soft tortilla and cut into fingers, and mash the filling well.
For the rest of the family
Serve adult quesadillas with salsa, guacamole, soured cream and hot sauce.
Storing and reheating
Cool, then keep wrapped in the fridge for up to 2 days or freeze (uncut) for up to 2 months. Reheat in a dry pan or oven until piping hot inside, then cool before serving. Never reheat more than once.

Questions parents ask
Are tortilla wraps ok for babies?
Yes, though many contain some salt, so check labels and choose lower salt brands. They contain wheat.
Can I use beef instead of turkey?
Yes. Lean beef mince works well and adds even more iron.
